Curried Chicken Salad on Croissant

 

Vietnamese Banh Mi - Sliced pork tenderloin served with crunchy carrot/radish/scallion slaw and sweet chili aioli - a new favorite!!

 

Italian Turkey - Herb Roasted turkey Breast, Provolone cheese, Sun-dried tomato cream cheese, Pesto aioli, avocado,  tomato, lettuce and sweet onions served on parmesan ciabatta bread.     

Roast Beef - Roast beef topped with caramelized onions and bell peppers and horseradish mustard served on artisan bread. 

 

Ham and Cheese - Virginia Ham, Swiss Emmentaler and Honey Mustard with lettuce tomato and sweet onion served on freshly baked bread.

 

Veggie - Cream Cheese, Mayo, Provolone Cheese, Avocado, tomato, onion, sliced cucumber and lettuce on a soft French roll.

Laura's Gourmet Greens - Spring lettuce, red onion, blue cheese, candied walnuts and fresh raspberries dressed with my special Dijon/Roasted Garlic/Shallot Dressing. This dressing is extremely popular with my clients as is this salad.

 

Caesar Salad - Romaine lettuce topped with parmesan and cheese, freshly made garlic croutons and my own Caesar Dressing.

 

Baby Spinach Salad - Baby spinach leaves, strawberries, smoky gouda cheese and candied almonds dressed in my strawberry vinaigrette.

 

Mexican Caesar Salad - Romaine lettuce, feta cheese, pepitas (pumpkin seeds), bell peppers, red onion, tomato, avocado and cilantro dressed in my creamy cilantro/lime dressing

 

Caprese Salad (Seasonal)- My home-grown tomatoes (fresh from the garden), fresh mozzarella cheese and Basil, dressed in extra virgin olive oil and Balsamic Vinegar.

 

Ravioli and Asparagus Salad - I like to tell my clients that while I call this dish a salad it could also be used as a second main dish for a hungry crowd. It is hearty.

 

Asian Slaw - tangy peanut/ginger dressing with crunchy cabbage, scallions, bell peppers, carrots, bean sprouts, cilantro and sliced almonds.

 

Rainbow Chopped Salad - Romaine hearts and cabbage with pears, apples , mango, hazelnuts, pomegranate seeds and blue cheese in a light vinaigrette.

 

Roasted Brussels Sprouts with Cabbage, Bacon and Pine nuts - Fruit and Nut studded - with dried cranberries

Thai Spareribs - Delicious, meaty braised ribs with an Asian flair.

 

Portuguese Chicken - Great, hearty roasted chicken dish with tomatoes, onions, prosciutto, red peppers and garlic. 

 

Crisp Spiced Chicken with Hummus Vinaigrette - served over couscous with pomegranate seeds and pistachio nuts- yummy

 

Taco/ Tostado Salad Bar - Very popular. Mexican Style Chicken or Shredded Beef, Monterey Jack Cheese, Cheddar cheese, Onions, Tomatoes, Lettuce, Corn Salsa, my fresh salsa, guacamole, black beans, sour cream and tortilla chips. Soft taco shells, flat crunchy tortillas for tostados and flour tortillas.

 

Fajita Bar - Your choice of chicken or beef fajitas. Served with sautéed bell peppers, onions, salsa, chips, guacamole, pinto beans and sour cream and fajita size tortillas.

 

Chili Verde - Mild green pork chili served with flour tortillas, lime wedges, sour cream, guacamole, chips and salsa.

 

Enchiladas - Choose from Cheese, Chicken or ground Beef. Served with red Sauce, pinto beans, sour cream, guacamole, chips and salsa.

 

Chicken Pot Pie - individual servings of tender, creamy chicken pot pie with a puff pastry crust.

 

Mac and Cheese - My homemade mac and Cheese with large chunks of ham. Stick to your ribs type of food.

 

French Dip Sandwich Au Jus - Roast Beef with Creamy Horseradish Sauce on a toasted French roll. Served with Au Jus on the side.

 

Bœuf Bourguignon- A classic version of red wine beef stew with chunks of potato, carrots and celery. I like to suggest to my clients that they serve this with either my garlic mashed potatoes or potatoes au gratin. I get raves about this dish every time.

Croissant French Toast with Caramel Apple Filling - Great alternative to the Cinnamon French Toast - like a caramel apple sandwich!

 

French Toast Bread Pudding - Served with toasted pecans, fresh berry compote and maple syrup. 

 

Cowboy Bread Pudding - This is a savory bread pudding with sausage, cheese and eggs. Really different and very filling.

 

Ham and Egg Casserole - A rich creamy breakfast casserole with ham, cheddar cheese, bell peppers and onions.

 

Chorizo and Egg Casserole with New Mexican Chile Sauce - Another version of a breakfast casserole with a potato crust, Spanish chorizo and eggs served with a mild chile sauce.

Mushroom and Shallot Quiche with Gruyere Cheese -   Again, rich, creamy and delicious.

 

Crustless Mini Quiche - Rich and creamy like a quiche but a bit lighter as it is served without the pastry crust. 3 Cheeses and mild green chili peppers - very pretty and delicious. Great for large crowds.
